The Ultraviolet Cabernets have developed somewhat of a cult following, and after tasting this 2014 vintage, it is easy to see why. This wonderful vintage was aged for 18 months in 50% new French oak, 50% neutral French oak. In the style of an old world Bordeaux, its bright acidity leads to hints of tobacco while its earthiness gives it a leathery characteristic. Soft, long-lasting tannins make for a beautifully complex and well-balanced finish.
After being inspired by the wines she tasted in Burgundy and Champagne, Samantha set out on her own. The goal is not to replicate Burgundy, but rather create alluring, vineyard specific, age-worthy wines revealing the beautiful terroir of California. There is minimal intervention, judicious use of sulfur, and never any additives in the winemaking process. Each wine is made in very limited quantities, and sold directly from the winery and to high-end restaurants around the country. Ultraviolet is a relatively new project setting out to celebrate classic grapes made in throw-back styles to offer enticing and affordable examples to new wine drinkers.
