This exquisite dry Rosé is a blend of 66% Pinot Noir from the Balestra Vineyard in Salinas and 34% Pinot Meunier from the Van der Kamp Vineyard on Sonoma Mountain. It is 100% “direct to press”, as opposed to from saignée, and the nuance and aromatics were preserved through the harvest and fermentation processes. The resulting wine reveals wild strawberries, peach, raspberry and citrus that make it a perfect candidate for your mid-day refreshment on a warm weekend day.
After being inspired by the wines she tasted in Burgundy and Champagne, Samantha set out on her own. The goal is not to replicate Burgundy, but rather create alluring, vineyard specific, age-worthy wines revealing the beautiful terroir of California. There is minimal intervention, judicious use of sulfur, and never any additives in the winemaking process. Each wine is made in very limited quantities, and sold directly from the winery and to high-end restaurants around the country. Ultraviolet is a relatively new project setting out to celebrate classic grapes made in throw-back styles to offer enticing and affordable examples to new wine drinkers.
