This is the wine that started the American Nouveau trend and we're lucky to have secured a tiny allocation to share with our members. The grapes that went into this wine were handpicked at the van der Kamp Vineyard on top of Sonoma Mountain in the Fall of 2018. Whole clusters of the grapes were then placed into a portable fermentor and seal for six weeks. In absence of oxygen, the grapes undergo carbonic fermentation and malolactic at the same time, resulting in a delicate and fruity wine, with aromas of rose petals and strawberry. The wine was bottled on October of 2018 and is meant to be enjoyed in its youth. Open this among your first bottles on Thanksgiving and serve it somewhat chilled (15 minutes in the refrigerator should do the trick).
After being inspired by the wines she tasted in Burgundy and Champagne, Samantha set out on her own. The goal is not to replicate Burgundy, but rather create alluring, vineyard specific, age-worthy wines revealing the beautiful terroir of California. There is minimal intervention, judicious use of sulfur, and never any additives in the winemaking process. Each wine is made in very limited quantities, and sold directly from the winery and to high-end restaurants around the country. Ultraviolet is a relatively new project setting out to celebrate classic grapes made in throw-back styles to offer enticing and affordable examples to new wine drinkers.
