This is an extremely well-made Sauvignon Blanc. The wine was fermented in an interesting combination of 23% Concrete Egg, 20% Stainless Steel Drums, 18% New French Oak Barrels, 39% Neutral French Oak Barrels. This calculated treatment, combined with suppression of malolactic fermentation and 6 months of sur lie aging give this wine a very complex 1, 2 punch of bright acid and fruit counterbalanced by some creamy, spicy notes. Impeccably crafted and fun to drink. This is a connoisseurs Sauvignon Blanc. 100% Sauvignon blanc. 525 cases produced.
