I couldn't agree more with the winery here: umami. At its best, Chenin Blanc bursts out of the glass with honeydew, lanolin, and yes, that ethereal notion of something else, something hidden deep within the earth. This is Chenin Blanc at its best and showcases why the grape continues to carve out significant space on the best wine lists in America. 300 cases produced.

Methode Sauvage

Methode Sauvage was started in 2013 by Chad Hinds whose goal was to find a voice for California Cabernet Franc and Chenin Blanc from all over the state. In the Spring of 2018 he began planting a vineyard in the California Alps of Siskiyou County, using the permaculture methods laid out by Masanobu Fukuoka. Methode Sauvage, which translates to "The Wild Method," has since become one of California's most cutting-edge natural wine producers and the wines are simply stunning.
