Each Ovum wine is made in the exact same way. Their low intervention production method is a commitment to letting each vintage and vineyard come through, for better or worse. Native ferments, no subtractions or additions, except for small amounts of SO2 - and extended lees contact for 8-9 months, which lends textural complexity. All of this is done in neutral barrels of acacia and oak, as well as cement egg. The nuances and subtleties of the resulting wines are owed exclusively to the terroir from whence they came. Founded in 2011 by John House and Ksenija Kostic House, Ovum was born out of the realization that Riesling in Oregon has similar qualities one would find in world class growing regions. As such, Ovum is exclusively committed to producing the absolute best white wines Oregon has to offer from Riesling, Gewurztraminer, and Muscat. Each wine is produced exactly the same way - if the wine smells or tastes different it has everything to do with the time and place, and little to do with the winemaker. Their hope is that through this minimal handling, and honest technique, they can produce old fashioned wines for the modern world.More from this winery
