The Ovum Wines 2021 Big Salt might be the best iteration of this style yet. Always an exciting and experimental wine, one that I have been a devout supporter of for years now, that's saying quite a bit. Fermenting all of these grapes together gives the wine its hallmark lifted aromatics, wild flowers, and racy citrus. The wine is viscous and palate coating without being cloying. Every year I look forward to this wine from Ovum and every year it delivers.
