The Paix Sur Terre 2018 Comes a Time from Paix Sur Terre is a single-vineyard stunner. Dark blackberry and freshly picked blueberry with dried savory herbs and curing spices. The palate is incredibly balanced with fine tuned tannins guiding you through what feels like a tour of southern France. Is that lavender? Sure seems like it. These wines are the reason Mourvedre needs to be celebrated more in California.
Paix Sur Terre, French for "Peace on Earth," has quickly become one of Paso Robles’ most sought after and critically acclaimed wineries. They focus on balanced, mineral-driven wines made in small lots with fruit from some of the region’s best vineyards. Attention first went to their single vineyard Mourvedre wines but Ryan has shown that Paso can indeed produce world class white wines from grapes like Picpoul and Clairette Blanche.
